2007 : First Impressions

With the Indian Summer, it was urgent to wait plot by plot that the skins became thinner & the pips crisper. This vintage was looming early, he became late. Then the vegetative cycle spread over 130 days between the flowering & the harvesting, instead usually of 110 days. Regarding the work in the vat-house, it was essentialy made by cold prefermentary maceration ( delestages, pumping over ) in order to optimize the polyphenol’s extraction. At last, our first tasting’s impression of the vintage 2007 ( before malolactic fermentation ) : A deep & intense color, an aromatic expression very developped as a fine & subtle tannic structure.
